In the coffee industry, timing is everything. For a roaster, sourcing "New Crop" beans ensures the highest moisture content stability, vibrant acidity, and the cleanest flavor profiles.

Because Indonesia spans across the equator, our harvest cycles are unique. Unlike many origins that have one single harvest, Indonesia offers fresh green beans almost year-round—if you know where to look.

The Dual Harvest Cycle

Indonesia’s geography creates two distinct harvest windows. Understanding these will help you plan your sourcing calendar:

  • Northern Region (Sumatra, Aceh Gayo): The main harvest typically runs from October to December, with a smaller "fly crop" occurring around March to May. If you are looking for the freshest Gayo or Mandheling beans, you should be requesting samples and securing contracts during these windows.

  • Southern & Eastern Regions (Java, Bali, Flores, Sulawesi): These regions generally harvest from May to September. This is the peak time to source the bright, floral coffees of Kintamani (Bali) or the heavy-bodied beans from Bajawa (Flores).

The "New Crop" Shipping Window

It is important to remember that "harvest time" is not the same as "shipping time." After the cherries are picked, they must undergo:

  1. Processing & Drying: 2–4 weeks.

  2. Milling & Sorting: 1–2 weeks.

  3. Resting (Stabilizing): Ideally, green beans should rest for about 30 days to stabilize moisture levels.

Pro Tip: For the best quality, aim to have your containers depart from Indonesian ports (like Belawan or Surabaya) approximately 2 to 3 months after the peak harvest. This ensures you receive beans that have been properly rested but are still at their peak freshness.

Why Buy Fresh?
Green coffee is a living product. As it ages, it loses its organic compounds, leading to a "woody" or "baggy" taste. By aligning your purchase with the Indonesian harvest calendar, you guarantee:
  • Vibrant Flavor: Higher concentration of essential oils and acids.

  • Better Shelf Life: Fresh beans stay stable in your warehouse for a longer period.

  • Consistent Roasts: New crops react more predictably to heat.
